Topping Culture Days

In early November, the Demetra Food Academy had the pleasure of hosting Master Instructors from the Scuola Italiana Pizzaioli, creating a unique opportunity for growth and sharing.

Established in 2023, the partnership with the Scuola Italiana Pizzaioli has been consolidated during this first year of joint efforts and will further evolve in 2025 with the launch of a synergistic and concrete program of meetings with industry professionals at major trade fairs.

The Talamona event, held on November 4th and 5th, was not simply a training opportunity, but rather a concrete opportunity to delve deeper into the techniques, traditions, and innovations associated with pizza preparation, with particular emphasis on "topping culture." While the classic Margherita remains the most consumed pizza type in the world, pizza represents a food that is increasingly complemented by other ingredients.

During the event, participants had the opportunity to meet, exchange knowledge and experiences, and strengthen relationships, thus strengthening their shared passion for a constantly evolving profession, yet always respectful of Italian culinary tradition.
