Demetra's constant commitment to ensuring its customers purchase increasingly safe products, both through meticulous monitoring of the supply chain and rigorous quality control within its own production facilities, has enabled it to take another important step towards food safety. In its new 2024 catalog, Demetra uses dedicated symbols to highlight the presence of gluten-free (SG) products in two-thirds of its product lines; if we add naturally gluten-free (NSG) products, the percentage rises to over 90% of the products. It is important to clearly distinguish between these two product categories. The term "gluten-free" is permitted only where the gluten content of the food sold to the end consumer does not exceed 20 mg/kg. According to the AIC guidelines, it should also be specified that a product is "naturally gluten-free" when it does not naturally contain gluten or belongs to food categories that are not risky for celiacs, since there is no risk of accidental contamination during the production process.
