Chicken salad with croutons and walnut pesto

Ingredients for 4 portion
  1. 1 chicken breast
  2. 50g baby salad leaves
  3. 50g iceberg lettuce
  4. 50g parmesan flakes
  5. 60g croutons
  6. 50g Walnuts Pesto
  7. q.s. walnut kernels
  8. q.s. celery
  9. q.s. Sea Salt Flakes
  10. q.s. Black Pepper, Ground
  11. q.s. Walnut Oil
Method

  • Arrange the salad leaves on a plate, place the roasted chicken breast on top and garnish with the remaining ingredients.

  • In a small bowl combine the walnut pesto with the walnut oil and season the salad just before serving.
