Trippa Remix

Ingredients for 4 persons
  1. 800g Tripe "Alla Marchigiana"
  2. 160g parmiggiano reggiano
  3. q.s. Beef Stock Strong
  4. q.s. Green Pepper, Freeze-Dried, Whole
  5. q.s. vegetable chips

  • To make the chips, slice the vegetables very finely and place in a dryer at about 70 degrees, until completely dehydrated.

  • Heat the trippa and adjust the density by adding the beef stock.

  • Spread the grated cheese flavoured with freeze-dried green pepper on a sheet of baking paper and bake in the microwave making thus creating the parmesan wafer.

  • Serve the trippa piping hot with the parmesan wafer and vegetable chips.
